We're finally using C&P Events for our first event this month. One request I've had is for multiple people to be notified each time a new person is registered. How can I set this up?

Good day!
While the event does not notify directly you may use the Portal to send a copy of the receipt to any number of people you want. You may also set up an Autoresponder in Salesforce to send an HTML email to any number of people you want based on the SKU of the event and levels.
