Will payments for C&P events show up as Salesforce Opportunities event if I don't have the events module installed in Salesforce? (I currently do have the payment processing donations module installed though, which integrates C&P donations with Salesforce)

Yes- the answer is definitely YES.
Any transaction through our gateway posts to Salesforce once you have the Payment application installed.Regards,
