In the Contacts & Accounts section of the C&P settings in Salesforce, I have phone number mapped to "mobile phone" and e-mail mapped to "personal e-mail." However, the preferred e-mail dropdown does not get set on the Contact. How can I map that dropdown so that the phone number and e-mail inserted get set as the preferred?

We do not do any modification of the existing record except for the rules you create in Custom Mapping. I'd suggest creating a rule for SKU is ANY, and SKU is blank that sets the Preferred Email and Preferred Phone.
