I have a client that uses a payment form for their childcare sites, but they don't want the opportunities going into Salesforce. Is there a way to keep the form active, but not have it go into Salesforce?

NO, it is not possible. Please note that our integration with SF is globally NOT specifically. Once you integrate with SF all the transactions processed through your account will be posted to SF.Regards,
