I would like to know if there is a way to customize the Opportunity Name that gets assigned to a donation created in C&P and posted to Salesforce. The Opportunity Name that got assigned to a donation was simply $20 (the dollar amount of the donation). We would like to customize this field to include the name of the person that made the donation. Is this possible?

The answer is a definite yes and through SKU's you may customize opportunities using the available fields.
