Great question-- this is why we have added a feature called SKU.
Given all the options in Salesforce and the dynamic nature of data we have implemented a feature in Salesforce that makes changes based on the SKU of the item.
Use SKU for each of the items to be paid for and in Salesforce > C&P Settings > Opportunity make changes based on the SKU. When the transaction posts, in Salesforce, all aspects of the transaction may be updated, changed and modified based on the SKU.
