In the contact Alias mapping, the phone field maps to the business field by default. How can I change that default to map to the regular phone field?

Are you trying to change the way the Alias maps as shown below:
I guess we are not sure what you are asking.
If you want to change the default value of the "Map to Contact Record" pull down menu - the default cannot be changed as it is hard coded and is designed to allow for selection when you are pushing the data. We are not considering adding this as an optional setting since it adds a lot more to the setting where one can simply select which field one wishes to push the data.

No it is not a feature currently. We have added this as a feature request.
The idea was fields to be a pull down menu so you may choose whatever you want. Setting up a default was not in the design and coming up with yet another setting to have people choose what they want to be the default makes the admin more complex.
