As far as I can tell, coupons codes land in Salesforce in CnP Data. In would be much more useful if that information appeared also on the opportunity.

Yes they would but there is a challenge.
Majority of transactions do not have coupon code and are not for event. It is always hard to add a field for a subset of transactions. In other words we need to add a field that is not used except for events.
