It seems that adding Stripe as a gateway does not add Apple or Google's wallets as payment options to an SMS Giving form - is this intended functionality? Is incorporating those payment methods on these forms on the roadmap?

Yes - this is in the works and is scheduled before end of the year.
A couple of items are ahead of it but it will be added ..
