Should every campaign in Salesforce be entered in Connect? We have several active campaigns that volunteers will fundraise for.

No- the idea is for Connect campaigns to post to the campaign you wish for it be credited to.
Fundraisers' campaigns are created dynamically based on the format you specify for the campaign name.
