How is the CnP_PaaS__Contact__c field used in the Opportunity? What processes populate it? Can we use it for offline donation entry, such as for checks in the mail etc?

Any reason why you are not using the new Virtual Terminal which allows you to process any payment type you want?
The new VT offers "Custom Payment" Type. For cash you may choose Custom Payment type and enter Cash in the name. Using this the system will send the receipt if you enable the Send Receipt option.
This feature was not available in 4.x version and can answer your question without any need for further programming.Regards,
