I just noticed that the Product Image Upload section has disappeared from the Product/Membership Customize tab. Has it moved or been lost?

Nothing has disappeared from anywhere.
Remember that if you are adding options to a product then the options will have image and not the product. Perhaps you have enabled product option and now are not seeing images for product since they are moved to options.
